At the southern seas of Chile, sea urchin is captured by divers in small boats, wich are delivery to a medium ship carrying raw materials to the port of disembarkation.
Sea urchin roes are carefully selected and then classified into 5 categories according to its size, color, and texture, and then it is packed in 100-gram molds.
